One of the particularly aggressive and deadly types of cancer
associated with celiac disease in adults is known as
Enteropathy-associated T-cell lymphoma (EATL), which is a T-cell
non-Hodgkin lymphoma that develops in the small bowel. So, if you
haven’t heard of EATLs, you should know that while current estimates
indicate that even though EATLs are rare overall, they are one of the
most common causes of death in people with celiac disease.

The Chef's Table: Going gluten-free
I receive many magazines a month with wonderful recipes. These national magazines rarely mention gluten-free recipes. I wanted to say thanks to you because you have provided some gluten-free recipes; I am the parent of a child with celiac disease, so it's nice to see a chef take notice.
Israel Defense Forces to draft celiac sufferers
The Israel Defense Forces have decided to draft celiac sufferers for mandatory military service.
Until now, the army had refrained from drafting people with celiac disease, primarily because of the difficulty in supplying them with suitable food. Celiac disease is a genetic disorder in which the immune system treats gluten - a protein found in wheat, barley and rye - as if it were a virus attacking the body. For those with the disorder, eating food that contains gluten can cause a severe allergic reaction.
Gluten-free diets gaining in popularity
Meet the latest dietary bad boy: gluten.
Gluten is a protein found in wheat, rye and barley. It causes some people serious health problems. But those people don't seem to be the only ones buying the gluten-free beer and brownies suddenly for sale everywhere. Consider:
Living With Celiac Disease: To stay gluten-free, knowledge is relief
Something seemingly as innocuous as a crouton flake in a bowl of soup can affect Diane Craig's health.
The 60-year-old Carmichael resident encountered just such a hazard when she and fellow members of her celiac disease support group dined at a local chain restaurant.
They had chosen the lunch spot specifically because it boasted a gluten-free menu, essential for people such as Craig who suffer from the autoimmune condition that causes the intestines to lose the ability to absorb nutrients. Gluten, a type of protein, is found in wheat, barley and rye.
Can diet help autistic kids?
For years, families with autistic children have tried all kinds of non-medical therapies hoping for help.
One is a gluten-free diet.
Doctors have been reluctant to suggest a diet for autism, but some Houston researchers have decided to test this diet and see if it truly does help.
Temptation lurks behind every menu
No pizza, pasta, cakes, cookies or pretzels. I try to stay away from all of these foods, like so many others on a gluten-free diet. I don't have celiac disease, an autoimmune disorder of the small intestine, which is the main reason many start a strict diet of wheat-free, grain-free foods. Instead, I was diagnosed with Crohn's disease when I was 7, which affects the gastrointestinal tract. Although I had always stayed away from lactose (another allergy), at age 13 I began the stricter gluten-free diet. Around that time, my Crohn's was the most debilitating, so I was taught at home for two years.
New products make gluten-free diet easier to maintain
Barbara Ziska has eaten a gluten-free diet for seven years, ever since she was diagnosed with celiac disease, an inherited autoimmune disorder that affects the digestive process of the small intestine. When a person who has celiac disease consumes gluten, a protein found in wheat, rye and barley, the individual's immune system responds by attacking the small intestine and inhibiting the absorption of important nutrients into the body, according to the University of Chicago Celiac Disease Center. By going gluten-free, Ziska, of Endicott, is able to help control her symptoms.
Gluten-free camp for kids with celiac disease
he Taylor Family Foundation's annual fundraiser is coming up soon in the East Bay to help support free camp programs for children with life-threatening illnesses and children at-risk. This year, I visited a camp session that helped children with an illness called celiac disease.

Restaurants cook up ways to accommodate food allergies
A growing awareness of food allergies and intolerances and their associated risks has an increasing number of local restaurants serving up strategies to avert reactions to common culprits, like peanuts, gluten and dairy.
Some eating establishments agree to substitute ingredients upon request. Others go further, rigging their registers with alerts when a patron with food allergies is being served. A few have even developed menus tailored around specific food allergies.

Winning first place in a national food competition made it more sweet.

Deconstructing Food Labels
For me, grocery shopping isn't as easy as it once was.
There are too many choices.
At one time, the only words I looked for on a package were the phrases "low-fat" or "whole grain." Not anymore.
Take pasta. Now there are organic and gluten-free choices too.
Autism, gluten and dairy: figuring out if there's a link
Many parents of children with autism say their kids do better when placed on gluten-free or dairy-free diets. (Go, for example, here, here and here.) But anecdotal reports are a little hard to parse -- ideally, what one would have is a carefully designed study in which children's diets are altered or not and their behavior and progress then measured. Such studies are rarely done -- tricky to design, expensive to fund, and probably not the kind of study most likely to lure drug company money.
Chef Chris Horridge explains how to eat yourself well
Michelin-starred chef Chris Horridge is mixing a carrot puree in front of me. Telling me to note the "amazing explosion of flavours", he hands me a spoonful, after adding coriander. "We're looking at ways to create it with uncooked carrots so we can keep the live enzymes. If we can, we're on to a winner," he says. Next comes a spoonful of seeds - sunflower, hemp, pumpkin, poppy and sesame - smattered with glutamate-rich soy sauce, which tastes surprisingly delicious. "The heat affects the omega-3, so we only roast half of the seeds," he explains.
Allergies require tailored diet
I'm often asked about food allergies or intolerances, and I asked a friend to give us some insight into living with the challenge of overhauling a diet. My friend Dixie Stanforth, a lecturer in the Department of Kinesiology at the University of Texas at Austin, was diagnosed with celiac disease last year. In addition, she is allergic to casein, a protein found in dairy foods.
The sin of gluten
My wife has invited a couple to lunch, but the woman has to have gluten-free food. Could you suggest some foods we might serve?

Running over medical obstacles
Amy Yoder-Begley sat in her home this month, meticulously packing foods in preparation for the Beijing Olympics.
She had to make sure she had enough cereal and SoyJoy bars as part of a lifestyle she had grown accustomed to over the past two years. Without adjusting, she wouldn't be in the Olympics representing the United States in the 10,000 meters.
